I don't think we're on the same wavelength here - the attributes you list in the OP are just that - attributes. If you were going to make categories out of them it would assume that each product was only defined by that 1 attribute, and that doesn't sound right to me. You're selling a bottle of 10 year old Irish whiskey for under £60 right? So there's 3 'categories' that one product would be in for a start.
Price category - well you have the 'Shop by Price' dropdown selector that can do that, regardless of what category the product is in. Region and Age could be Extra Fields or in the product description ... basically these are quite specific criteria - attributes - to use for categories. Whereas 'Single Malt' - that'd be a category.
Perhaps check out how other whiskey sellers present their stock?
